Cod Loin and healthy veggies
Cod loin cooked using the Smooth Cat Fish spice mix.

Simple and not time consuming recipe, yet amazing flavours.
Recipe
1 Cod loin
3-4 broccoli florets (depending on the size)
6-8 Chantenay or baby carrots (or 1 large one)
70-100g butter
a squeeze of lemon juice (optional)
1 tablespoon of the Smooth Cat Fish herb mix
Salt to taste
Let's marinate the cod! Add the Smooth Cat Fish (remember to shake the pack) and salt to the cod and rub it. Place it on the large sheet of parchment paper. Now decide for much acidity you would like to have - you might want to squeeze some lemon juice or add couple of slices of lemon on top of cod, but remember - the Smooth Cat Fish already has some acidity to it.
Divide the butter in to smaller pieces and place it on cod. Now wrap the cod in the parchment paper. You can also make it an envelope and tuck both ends underneath it, with all the possible ways to do it - as long as it is sealed its good to go in the oven! Dont forget to preheat your oven.
Cook at 180c for about 14-16 min.
Meanwhile boil a pot of slightly salted (I use 1/3 of teaspoon for 1lt of water) water and blanch the carrots & broccoli. I generally do 5-7 min for carrots and 3-4 min for broccoli.
Check the Cod and you are ready to plate!! Dont discard the liquid in the bottom of the parchment, it has got all the beautiful flavours from the fish. Use it to make a light sauce or just drizzle it over!
